This is the TM FX help page, which is more general for different RME recording interfaces.
But hardware differs in some details, such as the number of supported reference levels.
So you need to consult the UFX II manual, which reference levels are supported by your device:

Input sensitivity switchable between Lo Gain and +4 dBu
Input level for 0 dBFS @ Lo Gain: +19 dBu
Input level for 0 dBFS @ +4 dBu: +13 dBu
Variable digital gain: 0 to +12 dB
The UFX II supports +13 and +19 dBu on its analog inputs. Consumer level (-10 dBV) is not supported, but you can use the variable digital gain (up to +12 dB) to come into that direction.
The steps:
1. Choose the ref level with the highest sensitivity: +13 dBu.
2. Add +12 dB digital gain.
By adding 12 dB digital gain, you achieve a reflevel of +1 dBu (+13 dBu - 12 dB = +1 dBu)
Consumer Level (-10 dBV) is -7.78 dBu; let's say -8 dBu (-10.21 dBV).
So, from -8 dBu (consumer level) to +1 dBu you have an additional headroom of 9 dB (+1 dBu - -8 dBu = 9 dB)

Yeah, long story short I had to return to the III because of an issue with the retailer, not the unit. II has been great but I’m working with some consumer level equipment at the moment. My issues arose while attempting to set the mic pre trim appropriately for a tape machine while also capturing the signal digitally by the RME.
When increasing the variable gain by 9.0 the signal is clipping on the RME analog input. On the Lo Gain setting with no variable gain added, I am still tracking dangerously close to -6 on Digicheck. Turning down the trim on the mic pre will result in the signal not hitting the tape hard enough.
Any ideas?
Make input gain setting and input reference level setting for digital recording only.
Output to tape machine is another thing and you can use output reference level settings, there you have four options to choose from. One will fit.

Your analog gear runs on consumer level, -10 dBV, which is -7.78 dBu (for easier calculations, let's say around -8 dBu).

On the UFX II analog inputs, you use reflevel "Lo Gain", which allows for hot studio levels up to +19 dBu.
Then it is clear that you only get a weak input signal at the UFX II because you configured its analog ports to be most insensitive to support even very hot studio levels up to +19 dBu.
So what do you need to do? You need to make the analog inputs on the UFX II more sensitive to much lower consumer levels.
According to the manual, the UFX II supports +19 and +13 dBu as reference levels. And you can additionally add 12 dB of digital gain. See manual ch 39.1.
1. Choose +4 dBu
2. Set the variable digital gain to +12
Then the resulting reference level will be +13 dBu - 12 (digital gain) = +1 dBu.
It's not exactly consumer level but close to it with 9 dB headroom.
Consumer Level is ~ -8 dBu. So you will have 9 dB headroom (+1 dBu - -8 = 9).
Side note: when using "Lo Gain" on the analog inputs of the UFX II, you needed to raise the gain in the analog domain (at the analog mixer) that much that you got distortion already in the analog domain. But still the analog signal was relatively weak because it's consumer level.
