Hey guys i will buy a new macbook pro m1 pro 2021 and want to use a USB-B to USB-C Cable like this:

I would think so since my babyface pro fs came supplied with such a cable.

Sorry I am on windows, there RME is 100% stable. Mac too of course, but apple has been known to throw a curve ball for third parties now and then.
