I bought myself another Adi-2 FS dac again, this time with the AKM chip and I love it
Now my question is, can I use an USB cable without the 5v power-lead connected, I mean, signal only ?

You can answer this yourself, device can't be powered by USB, see manual. So ..

If you don't know what the whole thing is for, then I would rather leave it alone and use a standard USB2 cable
According to an article which I found using google …
USB2 has four lines: VBUS, D+, D-, GND.
GND should not be disconnected because the shielding runs over it.
The state of the VBUS line indicates whether a device is connected or not.
If you disconnect the 5V line, your PC may not recognize the device anymore, then no data connection is possible.
So, better do not experiment too much, better use something which is standard.
Lindy offers good cables, not overpriced. The "premium cables" offer good plugs and shielding at a still affordable price.

You can expect a blown USB port and us not wanting to repair this on warranty claims. Cutting the power lines is a cheap trick to remove ground loops, but cutting ground will cause all kinds of overvoltage conditions in certain situations that damage the USB port - and the cheap trick becomes an expensive trick. Has been explained here before.
