Topic: What exactly is latency?

The latency setting on my RME MADI PCIe only affects the ASIO monitoring of VST/VSTi plugins right? Any inputs monitored via TotalMix is still zero ms latency am I correct?

So if I don't need to monitor VST plugins are there any reason to have low latency settings?

Yes.

Not really...

Certainly not if you are just doing multitrack recordings.

Some people like to mix at lower latencies so that the delay between fader movement and audible result is as small as possible.
