The specs on the rme-audio.de website say the two preamps on the new Digiface AES have 0-65dB gain, but the downloadable manual says 0-75dB. Which is accurate?

This image is from the user manual and it seems to show the red bar at 37dB has enough space to go up to 75dB.
I claim the user manual from the product webpage is the information to trust.

It also appears that on page 38 of the manual, the max gain is given as 75 dB, but on page 90 of the manual the number is 65 dB.
It is indeed 65 dB, plus PAD, which gives a total gain range of 75 dB. I will change the text to make this more clear.
With the current beta of TotalMix FX 1.80 (b3) the gain range is now 75 dB, plus PAD. The manual has been updated accordingly.
