Have a look at the manual page 38.
The AES, Coax and Optical OUTPUTS always carry the same signal (*1).
So, for the intended configuration:
Series 500 -> AD conversion -> AES (or Coax/Optical) out -> recording interface -
ADI-2‘s digital outs are already used.
Therefore Neumann monitors have to be feed by 1/2 analog out like you probably already have it connected.

You can configure the Peak Meter to show the signal pre or post volume control, or both, or absolute analog output voltage in dBu:
SETUP / Options / Display / Hor. Meter: … Pre-FX …
By pressing the Encoders 1 or 2 you can scroll though various main screens, including Line or Phones Out 1/2, Phones Out 3/4, Analog Input, an overview screen of all I/O levels at the same time, etc.

Only USB Multi-channel Mode allows independent access to AES or Coax/Optical outs, but this doesn’t help you as you don’t have ADI-2 connected via USB.
Even then you might miss DSP and volume control on AES, so analog monitor connections might be the best option anyway.
