Hi Luca,
Ok, become acquainted to DURec and pre-test 1st.
Prepare a setting for this event with a PC connected.

Tip: in TM FX there is often a little problem, that you can't see/find the button "Record view", see manual ch 38.2, when all submenues are open (View Options, Snapshots, Groups, Layout Presets, DUREcorder).
My recommendation is that you collape e.g. groups or layout presets, which might be used more rarely.
Then you can select "Record View" to mark DURec record and playback channels.
I wouldn't select all possible channels and only record those that you actually need.
Then you can record more on your stick and the 2GB file extents contain a larger time frame.
One DUREc file can at max be 2GB long, if needed up to 100 become written.
So the max file length / disk space of one recording can be 200GB in total.
But relax for a few channels and a few hours of recording you won't reach that ...
Then you can store the current routing including DURec / Record View settings to one of the six user presets:
TM FX -> Options -> Store current state into devices -> Setup 1 .. 6
In standalone mode you can recall these settings on the UFX II/+, see manual ch 23.3:
Setup/Rev -> Setups -> Load all Settings -> Setup Select 1..6
Or modify and store into another setup ...
Also pre-check whether your pen device is able to record the number of channels without problems.
Observe USB load when testing, see manual chapter 38.5:
USB load should exceed 80% only for a short time.
I made good experience with the Sandisk Extreme, which was proposed by Matthias Carstens and also with the models with even higher capacity (128 and 256 GB).
