one ADAT port supports only 8 channels at single speed (4 @double, 2 @quad speed).
With two ADAT ports on UFX and UFX II you would have only 2x8 = 16 ch (in and out).
Well .. now do the math:
M-1610 16 inputs, 8 outputs
12Mic 12 inputs, 2 outputs
TOTAL: Inputs 16+12= 28 ---> doesn't fit.
There is no flagship interface like the UFX for AVB. The flagship interfaces have a much "richer" feature set compared to an AVB interface (which has basically only USB and AVB port). Therefore, I would recommend getting an UFX III with MADI.
Then you have all the nice features like: DURec, Autoset, standalone capabilities, RoomEQ, Crossfeed, ...
The setup would look like this, you connect the MADI devices one behind the other and get something like a "ring" structure.

For MADI choose 96k frame. The clock slaves will follow the clock of the master (UFX III).
That is another point where MADI currently still wins. With AVB you need to reconfigure the clock settings on changes on each of the connected AVB devices. With MADI you have it much easier in that regards from operational perspective.

For MADI
Best is to get the SFPs ("transceiver") from RME, otherwise you have to look very closely to get those with correct wavelength and firmware. To prevent any possible issues in that regards, better get those from RME.
In terms of cabling. I would get OM4 multimode fiber cables. About the same price as OM3, more recent, better looking standard color (violet).
Get OM4 multimode fiber cables with the correct plugs, you need between
- UFX III and M-1610 Pro: SC to LC
- M-1610 Pro and 12Mic: LC to LC
- 12Mic and UFX III: LC to SC
You get patch cables (duplex cables) from 0.5m up to 30-50m.
Everything longer in a building is not a "patch cable", this is in-house cabling between patch panels.
You need most likely only "patch cables" between the devices.
The max cable length for multimode fiber between each of the devices in this "ring" is 2km! Quite flexible
If you have all in a rack you do not need longer than 0.5 - 1m.
Do not bend fiber cables too much.
